Salads
6 cups torn romaine lettuce
2 oranges peeled and sliced
1 small red onion thinly sliced
Half small cucumber sliced
DRESSING:
1/4 cup orange juice
2 tablespoons grated orange rind
1 clove garlic minced
2 teaspoons red wine vinegar
1/4 cup vegetable oil
Salt and pepper
Dressing: Whisk together orange juice and rind, garlic, vinegar, tarragon, and salt and pepper to taste; gradually whisk in oil.
In salad bowl, combine lettuce, orange slices, onion and cucumber; add dressing and toss well.
